Having a Cod dish as part of your meal not only provides many dietary benefits but also makes the evening with your loved ones a memorable one. A Codfish is rich in proteins and low in fats. It also provides vitamins and minerals, making it ideal for bodily functioning.

Ingredients
- 2 lemons
- ½ small red onion peeled and sliced into thin rings
- 1 teaspoon of kosher salt
- ½ cup of coarsely chopped and pitted green olives
- 2 tablespoons of chopped drained capers
- 1 ¼ cups of olive oil, divided
- Grounded black pepper
- 8 (6 ounces) pieces of skinless Cod fillets
- 2 dried red chilies, stemmed or ¼ teaspoon of squeezed red pepper flakes
- ¼ cup of chopped flat-leaf parsley leaves
Steps to Make The Dish
- Start preparing the relish by grating the zest from the lemons and set them aside. Subsequently, with the help of a sharp knife, cut the peel and remove the white pith from the lemons and discard them.
- Take a medium bowl. Cut between the membranes and put the segments in the bowl. Next, extract the juice from the membranes and discard the membranes and the seeds.
- Mix the sliced onions with 1 teaspoon of kosher salt in a separate bowl and allow it to sit for 10 minutes.
- Squeeze the onions to extract the liquid. Combine the onions with olives, capers, ¾ cup of olive oil, and the zest to the bowl with lemon segments. Season them with salt and pepper. Finally, toss them and cover them for 30 minutes at room temperature.
- Pre-heat the oven to 250 degrees Fahrenheit (ca. 121 °C).
- Take a shallow baking dish or an oven skillet and place the Cod in either of them. Sprinkle chili flakes, salt, and the remaining ½ cup of oil on the Cod. Now flip the fish and coat it.
- Cook the fish in the pre-heated oven for 30 to 40 minutes. Once the fish is done, put it on a serving dish.
- Garnish the relish with parsley and spread it on the fish.
