Authentic Bolognese Sauce Recipe.
You do not need lots of ingredients to prepare the best Bolognese sauce recipe. You will need some patience though because the sauce will take some time to achieve its authentic texture.
Ingredients (to serve 6 people):
- One chopped onion
- 2 Tbsp olive oil
- One chopped celery stalk
- One peeled and chopped carrot
- Dry white wine, 1 cup
- Tomato paste, half cup
- Ground beef – one lb
- 3 oz sliced and chopped pancetta
- One bay leaf
- A pinch of nutmeg, finely grated
- Two cups chicken stock or broth
- One cup milk
- One lb. fresh pappardelle or tagliatelle
- Half cut Parmesan, finely grated (some more for topping)
Chop onion, carrots and celery finely. Heat the oil in a large pot. Add beef pieces to the pot and season it with a bit of salt. Keep stirring these pieces on medium heat for 6-8 minutes. Once prepared, take them out and keep them aside. Clean the pot and place pancetta in it. Cook it over medium heat for 6-8 minutes until its fat is released and it becomes crisp. Now add the onion mixture to it and cook this mixture for 8 minutes.
Place beef in the pot and pour wine on it. Cook it on a medium to low heat. It will take about 15 minutes for the pot to become dry when all wine has evaporated and the meat is tender and finely ground. Add tomato paste, nutmeg and bay leaf. Cook it for five minutes.
The Final Steps
Pour milk and stock into the pot. Sprinkle a little bit of salt. Cook it on a slow heat for 2 hours without covering it. Once the meat is highly tender, discard the bay leaf. Adjust seasoning by adding just the right amount of salt. Boil pasta in the salted water. Once it is ready, place it in the sauce. Add half cup parmesan and pasta cooking liquid. Cook it on a medium heat for two minutes. Transfer it to a plate and top it with more Parmesan.
