Easy Risotto Recipe for Two

If you are planning a quiet dinner for two, here is a great meal idea. A simple and easy Risotto dish would make for a delicious meal. You may think Risotto is tough to cook, but this is not so. A dish that would be ready within 30 minutes and would be great to taste. Take a look at the recipe given below.

Ingredients

  • 1 cup of Arborio rice.
  • 1/4 cup of grated Parmesan cheese.
  • Chicken or vegetable stock that is unsalted (approx. 32 oz).
  • 1 tbsp olive oil.
  • 1 tbsp butter (unsalted).
  • 1/4 tbsp kosher salt.

Recipe

  1. Add stock to a pan and warm it on medium flame. Ensure the stock remains warm.
  2. Take a pot with a wide bottom, place it on the stove, and add butter to it. When butter melts, add olive oil. Now add the Arborio rice and mix well for about a minute.
  3. Add around 3/4th cup of the warm broth to the rice. Stir and let it cook for around 2 to 3 minutes. The broth should have nicely absorbed into the rice.
  4. Now add another 3/4th cup of the broth and stir again. Cook for around 3 minutes till the broth gets absorbed. Repeat this process until you are left with 3/4th cup of the broth. The rice would be cooked now. It should take you around 16 to 18 minutes for the rice to be cooked in this method.
  5. Switch off the stove. Add the remaining 3/4th cup broth. Add salt to the dish and then add the grated cheese. Stir gently until it mixes for around a minute. Your dish is now ready.

Serve the risotto in two warmed bowls. If you wish, add more grated cheese on top while serving. Enjoy the delicious risotto that is full of taste and nutrition.
