Easy Vanilla Cupcakes Recipe

Reasons to Love and Make Cupcakes.

Cupcakes have become very popular in the last years. They’re more popular than ever before; it seems like there’s a cupcake shop in every town and in every corner. Have you ever wondered what makes people love cupcakes? There are several reasons people love cupcakes so much, but one of the main reasons is that cupcakes make people happy 🙂

Ten Step Vanilla Cupcakes Recipe

Ingredients:

  • 110g softened butter
  • 110g golden caster sugar
  • 2 large eggs
  • ½ tsp vanilla extract
  • 110g self-raising flour

For the buttercream

  • 150g softened butter
  • 300g icing sugar
  • 1 tsp vanilla extract
  • 3 tbsp milk
  • food colouring paste of your choice (optional)

Instructions:

  1. Pre-heat the oven to 180C/160C, and fill a 12 cupcake tray with cases.
  2. Using an electric or a manual whisk, beat the softened butter and the golden caster sugar together until pale and fluffy then add the large eggs and keep whisking.
  3. Add the vanilla extract, the self-raising flour and a pinch of salt, whisk until just combined then spoon the mixture into the cupcake cases.
  4. Bake for 15 mins until golden brown.
  5. Insert a skewer into the middle of each cake to make sure it comes out clean.
  6. Leave to cool completely on a wire rack.
  7. To make the buttercream, whisk the softened butter until super soft then add the icing sugar, the vanilla extract and a pinch of salt.
  8. Whisk together until smooth (start off slowly to avoid an icing sugar cloud) then beat in 3 tbsp milk.
  9. If wanting to colour, stir in the food colouring now.
  10. Use the buttercream to decorate your cupcakes the way you desire, and let your mind to be creative.
