Are you a fan of lemon-seasoned grilled chicken? Try this delicious and healthy grilled chicken with lemon, thyme, and olive oil recipe. To prepare this dish, you will need chicken breasts because boneless chicken tastes good in this recipe, and adding a minute chicken thigh is excellent. Yes, you can add more thighs if you are a dark meat lover. However, make sure you always bring skinless thighs. Now, let’s talk about the ingredients.
Ingredients
The following ingredients are for four servings. You can adjust the quantity as per your need.
- Chicken: 4 boneless and skinless chicken breasts
- Salt: 1 and ½ teaspoons (kosher salt)
- Garlic: 4 cloves peeled and crushed
- Black pepper: 1 teaspoon
- Thyme Leaves: 2 tablespoons chopped
- Lemon: 2 or more as needed
- Olive oil: 2 tablespoons (more if needed)
- Mint leaves
Steps
Step 1: Seasoning chicken
Put chicken breasts in a large bowl—season with salt, black pepper, garlic, and thyme. Add the juice of 1 lemon and mix well. Cover and leave it for 15-20 minutes at room temperature.
Step 2: Refrigerate
Mix olive oil and mint leave with the chicken. Now, cover and keep the bowl inside the refrigerator for 1 hour. Next, remove the chicken from the fridge. Now, it’s time to prepare your grill. If you don’t want to put the chicken in the refrigerator, you can place them on a rimmed baking sheet and let it sit for an hour at room temperature.
Step 3: Prepare your grill
Light your grill and leave it for some time to build a fire. However, if you have a gas grill, it’s better to use it in medium heat. Once your grill is ready, brush chicken breasts with olive oil and place them on the grill.
Step 4: Grill them until they cooked through
Grill the chicken breasts properly. Turn them every 3 to 5 minutes until the underside of the chicken turns brown or cooked through. It will only take 15 minutes to grill the chicken thoroughly.
Step 5: Garnish and serve
Transfer the grilled chicken to a plate, now garnish them with light oil, lemon juice, and mint leaves and serve hot.
