Quick Prawn Noodle Soup Recipe

Prawn noodle soup is extremely popular in Asian cuisine. It is often served in fine dining restaurants all over Asia. The recipe is quite intricate and requires some Gastronomy skills to get the perfect savoury and sweet flavours. Here is an easy recipe that will help you recreate this Gourmet Asian dish easily at home. The richness of the broth will surely impress your loved ones!

Ingredients Required

  • Free-range eggs – 4 largeDried shiitake mushrooms – 10 grams
  • Chicken stock – 1 liter
  • Chinese 5-spice powder – 1 tsp
  • Tamari Sauce – 5 tbsp
  • King prawns (de-veined and peeled) – 180 grams
  • Spring onions, sliced – a small bunch
  • Vermicelli rice noodles – 225 g
  • Sweetcorn – 4 tbsp
  • Coriander leaves, chopped – a handful

Preparation Method

  1. Take a medium-sized saucepan and boil water in it, then add the eggs gently to the water and cook for about 6 minutes till they are soft-boiled.
  2. Drain out the water and run them under cold water to stop the cooking process. Peel them carefully, cut into halves and set aside.
  3. In the meantime, soak the dried shiitake mushrooms in some boiling water for at least 5 minutes.
  4. Now add the stock along with 5-spice powder and Tamari sauce in a large pan. Remove the mushrooms from the water and add them to the pan as well.
  5. Allow the mixture to come to a boil, then reduce the heat and let it simmer for about 2 minutes. Finally, add in the prawns and continue to cook for about 3 minutes till they are pink and cooked through.
  6. Add freshly ground black pepper and season the stock. You can even add more Tamari sauce if required.
  7. Cook the noodles as per the instructions on the packet, drain and pour into 4 bowls. Pour the prepared stock over the noodles and top with 2 egg halves, some chopped coriander, sweetcorn and spring onions.
