Quiche can also be called an egg-based custard. To avoid having a soggy crust or a clumpy filling, here is what you can do.
1. Skip the crust: If possible, skip the crust. If you want a traditional quiché with a crust, then do the following steps. It will help with making a good quiché.
2. Cook veggies and meats in advance: Depending on the quiché you want to serve, cook veggies and meats in advance. This will stop excess moisture being released and ruining the crust. Sauteéing or roasting retain flavor and ensure evaporation.
3. Blend eggs: The filling in a quiche requires many eggs. Blend eggs and cheese well so that it bakes properly. Blend for less than a minute. Use cream cheese to get good consistency and flavor.

Quiche Lorraine:
You can use a store-bought crust to make this.
· Use 12 oz. of bacon strips (chopped), three white onions, minced thyme, ½ spoon of ground pepper, a cup of Gruyere cheese and ½ cup of Parmesan cheese.
· You will also need eight eggs, two cups of whole milk and a cup of heavy cream. Cook the bacon well first and remove it from the pan.
· Leave 1 tbsp. of bacon drippings and cook chopped onions with it.
· Add thyme and pepper. Add the cheese and bacon.
· Whisk eggs, milk and cream together.
· Pre-heat oven to 350°.
· Put the bacon and onions in the crust first and then pour the egg mixture over it.
· Bake it for 70-85 minutes and check if it is done with a toothpick.
· When it is, take it out and let it cool for 15 minutes before serving.
